Mango and Red Pepper Relish
Ingredients
2 ripe mangoes
125g (4oz) roasted red peppers from a jar
2 small red onions, finely sliced
4tbsp Sweet Thai Chilli Dipping Sauce
3 limes
20g pack coriander
Serve this fruity relish with grilled pork, chicken or fish

Method
1 Peel the mangoes, cut the flesh away from the stone and chop. Put the mango in a bowl.
2 Drain the red peppers, cut in half and remove the seeds. Slice, then add to the bowl, along with the onion. Add the chilli sauce, the grated zest of 2 limes, plus the juice of 3 limes. Toss together, cover and chill until needed.
3 Roughly chop the leaves from a 20g pack of coriander, add to the relish before serving and mix well.
