Marinated cucumber salad with pink peppercorns
Ingredients
2 large cucumbers, thinly sliced
2tbsp finely chopped fresh dill
1tbsp pink peppercorns
For the dressing
100ml (4fl oz) olive oil
50ml (2fl oz) raspberry vinegar
1 heaped tsp Dijon mustard
1tsp runny honey
A refreshing side salad

Method
1 Place the cucumbers in a shallow, wide bowl and scatter over the dill and pink peppercorns.
2 Whisk all the dressing ingredients together, season well and pour over the cucumber mixture. Toss to mix well, cover and allow to stand for 10-15 minutes before serving.
