Mashed Parsnips with Apple

Ingredients

10-12 medium parsnips
1 large cooking apple
2tbsp light muscovado sugar
50g (2oz) butter
20g pack flat-leafed parsley


This side dish uses seasonal autumn fruit and veg and makes a great accompaniment to roast pork or chicken

  • 120 calories
  • 6g fat (4g saturates)

Method

1 Peel and roughly chop the parsnips. Put into a large pan of cold, salted water and bring to the boil. Simmer for 10min or until almost tender.

2 While parsnips are simmering, peel, core and chop the apple, then drop into parsnips pan for the last 2-3min of the cooking time. Drain; return to pan. Add the sugar and butter and mash together. Roughly chop the parsley and stir in. Taste for seasoning before serving.
