Mayonnaise
Ingredients
2 egg yolks
1tsp English mustard
1tbsp white wine vinegar
150ml/5fl oz each olive oil and vegetable oil
squeeze of lemon juice

Method
1 In a medium-sized glass bowl, add egg yolks, a pinch of salt, mustard and vinegar and beat well. Gradually add oil drop by drop, whisking continuously till it begins to thicken and starts to emulsify. Be careful not to add the oil too quickly, as eggs can only absorb a little at a time.
2 Continue till all oil has been used up - you can add it more quickly once the sauce thickens. Whisk in lemon juice and taste. Season accordingly, and add extra vinegar, if necessary.
