Mediterranean bruschettas
Ingredients
2 ripe tomatoes, finely chopped
1 small red onion, finely chopped
1 ripe avocado, halved, stone removed, peeled and finely chopped
6tbsp finely chopped coriander leaves
8 thick slices of good crusty bread or sourdough
1 garlic clove, peeled
2tbsp red wine vinegar
Olive oil, to drizzle
Coriander leaves, to garnish (optional)
The classic combination of ripe avocado, juicy tomatoes and crispy red onion makes this an irresistible starter

Method
1 Place the chopped tomatoes, onion, avocado and coriander leaves in a bowl. Pour in the red wine vinegar and mix gently to combine. Season
well with salt and freshly ground black pepper to taste.
2 Preheat the grill to medium. Place the sliced bread on a baking tray and grill for 2-3 minutes on each side until golden brown. Rub both
sides of the toasted bread with the garlic clove.
3 Halve each slice of toasted garlic bread and spoon the avocado and tomato mixture on top. Drizzle with olive oil, garnish with some fresh coriander leaves, if desired, and serve immediately.
