Mini lemon curd and cream sponges
Ingredients
ready-made sponge cake or sponge flan
2-3tbsp lemon curd
about 4tbsp double cream
icing sugar and redcurrants, to decorate (optional)
You will need:
a small round metal cutter
These are a real cheat – no one will know!

Method
1 Stamp out as many rounds from the sponge cake as you can, so you've got an even number, then sandwich together with lemon curd and double cream. Top with a dusting of icing sugar and redcurrants to decorate, if you wish.
