Mixed berry, cherry and almond clafoutis
Ingredients
500g (1lb 2oz) mixed fresh strawberries, blueberries, raspberries and pitted cherries
4tbsp plain flour
50g (2oz) ground almonds
100g (31/2oz) golden caster sugar
2 large eggs, beaten
2tbsp finely grated orange zest
2 egg yolks, beaten
250ml (9fl oz) double cream
1tsp vanilla extract
Icing sugar, for dusting
Adding ground almonds to the clafoutis batter gives this dessert a wonderfully rich, nutty flavour

Method
1 Preheat the oven to 190ºC/170ºC fan/Gas 5. Lightly grease a shallow 23cm (9in) ovenproof flan or pie dish and scatter the berries and cherries over the base.
2 Place all the remaining ingredients in a food processor and blend until smooth. Pour the mixture over the fruit and bake in the oven for 25-30 minutes or until it is risen and golden brown. Dust the clafoutis with icing sugar and serve warm.
