Mushrooms baked in vine leaves
Ingredients
250g pack preserved vine leaves in salted water
1kg (2¼lb) mixed mushrooms
4 garlic cloves, peeled and halved
50g (2oz) butter, diced
Few bay leaves
Small bunch of fresh thyme sprigs
Olive oil, to drizzle

Method
1 Preheat the oven to 180°C (160°C fan, gas mark 4). Pour boiling water over the vine leaves in a bowl and leave for about 5 min.
Drain the leaves and, using about two-thirds of them, line the bottom and sides of a large baking dish measuring about 35cm x 25cm.
2 Wipe the mushrooms clean and trim off the stalks if necessary,
then slice thickly. Put in the baking dish and season well, then dot with the garlic and butter. Lay the bay leaves and thyme on top, and drizzle generously with olive oil. Cover with the remaining vine leaves.
3 Place the baking dish in the oven for 30 min until the mushrooms look juicy and feel tender when pierced with a fork. Remove the
top layer of vine leaves to serve.
