Pan-fried beef with rocket and olives
Ingredients
4 rump steaks or medallions
1tbsp olive oil
125g/4oz Grano Padano (Italian hard cheese) or Parmesan, finely grated
handful dry black olives, pitted
200g bag wild rocket

Peppery rocket goes perfectly with the juicy meat and rich olives

Method
1. Put steaks between clear film and bash with a meat hammer or rolling pin till they spread and become thin. Rub a little olive oil onto each one all over. Season with sea salt and freshly ground black pepper. Cover each with cheese.2. In a large, heavy-based frying pan, heat a little oil. Add steak and fry on high heat for a couple mins each side, until cooked to your liking. The cheese coating will be oozing. Throw in olives and let them warm though.
3. Divide rocket between plates, then top with a steak and some olives. Serve straightaway with crusty bread and some red wine.
