Pan-fried sardines


Pan-fried sardines

Ingredients

few generous scoops of flour

good pinch paprika

12 sardines, ready prepared, washed and dried

1tbsp olive oil

handful fresh parsley, chopped

2 lemons, roughly chopped, for serving

Method

1 On a large plate, add flour, along with paprika, then season well with sea salt and freshly ground black pepper. Stir to combine.   

2 Roll sardines in flour till coated. In a large frying pan, heat oil and add sardines, a few at a time, and cook till golden on both sides. This will only take a couple of mins. Drain on paper towels then transfer to a serving dish. Sprinkle over parsley and serve with lemons.
