Paneer and peas
Ingredients
2tbsp olive oil, or use a generous knob of ghee
227g pack paneer, chopped into small cubes (you'll find this with the
other cheeses)
1 onion, roughly chopped
1 clove garlic, roughly chopped
2.5cm/1in piece fresh ginger, peeled and roughly chopped
1 green chilli, halved, deseeded and roughly chopped (use 2 if you like it hot)
3 tomatoes, roughly chopped
2tsp garam masala
150g carton Greek yogurt
200g/7oz frozen peas
2tbsp double cream (optional)
A lightly spiced cheese side dish or a main dish for vegetarians

Method
1 In a frying pan, heat 1tbsp olive oil or half ghee, add paneer and cook till golden. Remove and put to one side.
2 In a food processor, add onion, garlic, ginger, chilli and tomatoes and whizz till combined. Add remaining oil or ghee, onion mixture and garam masala to pan and cook for 5-10 mins. Add yogurt, then fill carton with water and add. Stir through and cook gently for about 15 mins, till it begins to thicken.
3 Add peas and simmer till cooked, add paneer and cream and warm through.
