Pappardelle with bacon, spinach and pine nuts

Ingredients

300g (11oz) pappardelle (or any thick, long pasta)
4tbsp olive oil
200g (7oz) bacon lardons, or pancetta, cubed
50g (2oz) pine nuts
3tbsp red pepper, finely chopped
200g (7oz) baby leaf spinach


Use sliced mixed mushrooms instead of bacon for a quick, healthy vegetarian meal.

Method

1. Cook the pasta according to the packet instructions.
 
2. Meanwhile, heat the oil in a large frying pan over a high heat and add the bacon. Stir-fry for 3-4 minutes or until crisp. Then add the pine nuts and red pepper and cool for 1-2 minutes.
 
3. Drain the pasta and add it to the pan with the baby spinach leaves, stirring gently until the spinach has just wilted. Season generously and serve immediately.
