Pear and fig clafoutis with almonds
Ingredients
3 ripe pears
3 ripe figs
Butter, for greasing
200ml (7fl oz) crème fraîche
200ml (7fl oz) milk
3 eggs
125g (4½oz) sugar
2tbsp ground almonds
½tsp ground cinnamon
Icing sugar, for dusting
Pouring cream, to serve
This delicious dessert is ideal for entertaining as it looks fantastic but is simple to prepare.

Method
1 Preheat oven to 200ºC/180ºC fan/Gas 6. Peel and core the pears and cut into largeish pieces. Trim the stem ends from the figs and cut into slightly smaller pieces. If there is too much white on the skins, trim it off. Put the fruit in a 23-26cm (9-10in) buttered non-stick baking dish and arrange evenly.
2 Combine the crème fraîche, milk, eggs, sugar, almonds and cinnamon in a mixing bowl. Mix well with a hand-held electric whisk.
3 Pour the almond batter evenly over the fruit and bake in the oven until puffed and golden, about 35-45 minutes. Let it cool slightly and dust with icing sugar. Serve warm with chilled pouring cream.
