Peas with lettuce and bacon

Ingredients

250g (9oz) bacon lardons
2 Little Gem lettuces, shredded
100ml (3½fl oz) vegetable stock
225g (8oz) fresh or frozen peas
2tbsp chopped fresh parsley
1-2tbsp butter
Squeeze of lemon juice

Method

1 Heat a non-stick frying pan until quite hot and add the lardons. Turn down the heat and cook for 3 minutes, stirring, until the fat starts to run.

 

2 Add the lettuce; stir to coat in the fat. Pour in the stock, season and bring to the boil, then turn down the heat and simmer, uncovered, for 3 minutes. Add the peas and parsley. Shake the pan while it comes to the
boil; add the butter. Simmer for 2 minutes, remove from the heat, then squeeze over the lemon juice before serving.
