Peppered Jersey Royal Potatoes with Baby Spinach

Ingredients

900g (2lb) Jersey Royals
1tsp coarsely ground black pepper
25g (1oz) butter
75g (3oz) baby spinach leaves

Method

Cook Jersey Royals in boiling water until tender. Drain, then crush lightly with a fork. Add black pepper, butter and baby spinach leaves; stir to wilt.

 

Prepare ahead
Make the recipe up to a day ahead, omitting
the spinach. Cool, cover and chill. To serve, put the potatoes into an ovenproof dish, cover and heat for 15min alongside the duck. Stir in spinach to wilt.
