Pilau rice
Ingredients
250g basmati rice
3 tablespoons groundnut or
vegetable oil
4 shallots, peeled and thinly sliced
50g raw cashew nuts
1 cinnamon stick
8 green cardamom pods, smashed
4 cloves
10 black peppercorns
2 bay leaves
2 strips of lemon zest
470ml chicken stock or water
1 teaspoon sea salt

Method
1 Soak the rice in cold water for
30 minutes.
2 Heat the oil in a medium saucepan over a medium heat, add the shallots, cashews, spices, bay leaves and lemon zest and fry for 3-5 minutes until lightly coloured, stirring frequently.
3 Stir in the rice and add the stock or water and the salt. Skim and simmer for 9-10 minutes then cover and turn off the heat. Leave for 20 minutes, then fluff up with a fork.
