Piri-piri chicken
Ingredients
1tbsp olive oil
a generous splash piri-piri sauce
juice of 1 lemon
1tbsp tomato purée
2 cloves garlic, finely chopped
4-6 chicken thighs, depending on appetite

Method
1 In a bowl, mix together olive oil, piri-piri, lemon juice, tomato purée and garlic. In a roasting tin, sit chicken pieces and season well with a pinch of sea salt and some freshly ground black pepper. Next, pour piri-piri mixture all over chicken pieces and rub it in really well using your hands. Leave to marinate for at least 30 mins, or overnight if you have time.
2 Preheat oven to gas mark 6/200ºC (190ºC in a fan oven). Heat a large, heavy-based frying pan, add chicken pieces and cook till they're nicely browned all over. Return to roasting tin and cook in oven till cooked through and beginning to char, about 40 mins. Serve immediately.
