Pizza sauce recipe

Ingredients

2tbsp olive oil
1  onion, finely chopped
3 garlic cloves, crushed
2tbsp tomato purée
2 x 400g tins plum tomatoes
1 bay leaf
2tsp dried oregano
1tsp sugar


Make a batch of this sauce to keep in the freezer

Method

1 Fry the onion over a low heat in the oil until softened. Add the garlic and cook for 1min. Add the tomato purée and cook for 1min. Add the plum tomatoes, bay leaf, dried oregano and sugar.
2 Cook gently for 1hr, crushing the tomatoes with the back of a wooden spoon, until the sauce is thick and pulpy. Remove the bay leaf and cool. Use the sauce as required. Makes enough for two large pizzas (you can freeze the sauce in batches for up to three months).
