Portuguese salad
Ingredients
1 crispy lettuce (cos or iceberg), washed, dried and torn into pieces
4 large tomatoes, sliced
900g/2lb potatoes, boiled in their skins, peeled, then quartered or sliced
2-3 hard-boiled eggs, quartered
½ onion, sliced into rings
handful black or green pitted olives
lemon wedge, to serve
sprinkling of fresh chopped parsley, to serve
olive oil and vinegar, to serve
A simple salad that requires just a splash of oil and vinegar

Method
1 In a salad bowl, arrange lettuce leaves, then top with rest of ingredients. Serve with a lemon wedge and a sprinkling of parsley. Add a pinch of sea salt and dress with oil and vinegar to serve.
