Prunes wrapped in bacon

Ingredients

24ready-to-eat stoned prunes
4tbsp sweet chilli sauce
12 sunblush tomatoes, halved
12 rashers streaky bacon
100g bag watercress


A large dash of sweet chilli sauce makes these prunes rather special

Method

1 Preheat the oven to 200°C (180°C fan) mark 6. Use a sharp knife to split the prunes slightly through the middle. Spoon about ½tsp sweet chilli sauce and half a sunblush tomato into each prune.

2 Put one rasher of bacon on a board and use the back of a table knife to stretch it out. Cut in half widthways and wrap one half around a prune. Use the other half to wrap around another prune. Repeat the process until all the prunes are wrapped.

3 Put prunes on a lipped baking sheet and cook for 20–25min. Arrange the watercress on a plate and top with the prunes. Serve immediately.  
210cals, 11g fat (of which 4g saturates), 19g carbs, no added sugar per serving
