Purple sprouting broccoli, lemon and pinenuts pasta
Ingredients
300g (11oz) conchiglie pasta
150g (5oz) purple (or green) sprouting broccoli
2tbsp olive oil
25g (1oz) pinenuts
2 sliced garlic cloves.
zest of 1 lemon
Bursting with freshness, this is a perfect vegetarian main dish

Method
Cook pasta according to the packet instructions. Add broccoli to the pasta for the last 5min of cooking time. Heat 1tbsp olive oil in a frying pan and add pinenuts and garlic cloves. Cook gently until the garlic is just golden, then set aside. Drain pasta and broccoli and return to pan. Add garlic and pinenuts to the pasta, followed by 1tbsp extra virgin olive oil and the zest. Toss well and serve with lemon wedges to squeeze over.
