Red pepper rice
Ingredients
280g jar chargrilled peppers, drained and roughly chopped (reserve 3tbsp oil)
6 spring onions, finely sliced
1 clove garlic, crushed
½tsp hot smoked paprika
1 red pepper, deseeded and chopped
small bunch mint, leaves chopped
small bunch flat-leaf parsley, chopped
175g/6oz basmati rice, cooked, drained and cooled
juice of 1 lemon
A delicious mix of cooked and uncooked peppers

Method
1 In a bowl, add chargrilled peppers along with reserved oil. Stir in onions, garlic, paprika, fresh pepper, half herbs and season well.
2 Stir to combine and leave for 10 mins to allow flavours to develop. Add rice, remaining herbs and lemon juice to taste.
