Balsamic-roasted asparagus
Ingredients
6tbsp extra virgin olive oil
1tbsp butter, melted
4tbsp balsamic vinegar
550g (1lb 4oz) asparagus spears, trimmed

Method
1. Set oven to 200°C/180°C fan/Gas 6. Line a roasting tin with foil and grease with 1tbsp oil.
2. In a medium bowl, combine remaining oil, butter, and vinegar. Season well. Add asparagus and toss to coat evenly.
3. Spread the asparagus on the prepared tin and roast for 6-8 minutes. Roast for up to 2 minutes more for tender asparagus. Serve warm or at room temperature.
