Sizzling roast parsnips

Ingredients

800g (1lb 12oz) parsnips cut into wedges

50g (2oz) goose fat

2tsp sea salt

Method

1 Preheat the oven to 200°C (180°C fan, gas mark 6). Put the parsnips in a pan of cold salted water, bring to the boil and cook for 5 min. Drain.

2 Heat the goose fat in a roasting tin in the oven for 3-4 min until sizzling. Add the parsnips and roast for 15 min, then sprinkle over the sea salt. Roast for a further 20 min, turning once during cooking, until golden.
