Slow-simmered Fruit

Ingredients

350g (12oz) mixed summer berries
1tbsp golden caster sugar
4tbsp vodka or Cointreau

Method

Put berries into a pan. Add sugar, vodka or Cointreau and heat gently to dissolve the sugar. Don't stir, just swirl the pan over the heat for 4-5min or until the fruit begins to soften. Pour into a serving bowl and leave to cool.
