Smoked Sesame Tofu
Ingredients
2tbsp toasted sesame seeds
2tbsp Amoy Reduced Salt Soy Sauce
1tsp light muscovado sugar
1tsp rice wine vinegar
1tbsp sesame oil
220g pack smoked tofu, cubed
½ small white or green cabbage, shredded
2 carrots, cut into strips
200g pack beansprouts
4 marinated roasted red peppers, roughly chopped
2 spring onions, shredded
Stir-fried marinated tofu and veg makes a great veggie meal

Method
1 Put the sesame seeds in a bowl. Add the soy sauce, sugar and vinegar and ½tbsp sesame oil. Mix together then add the smoked tofu. Stir to coat, then set aside to marinate for 10min.
2 Heat a large wok or nonstick frying pan. Add the marinated tofu, reserving the marinade, and fry for 5min until golden all over. Remove from the wok with a slotted spoon and set aside.
3 Heat the remaining oil in the wok. Add the cabbage and carrots and stir-fry for 5min. Stir in the beansprouts, peppers, spring onions, cooked tofu and reserved marinade and cook for a further 2min. Serve immediately with brown rice.
COOK'S TIP
Replace the tofu with the same quantity of cubed pork fillet. Fry the pork as you would the tofu but leave it in the pan to continue cooking while you add the vegetables. Complete recipe.
