Spiced Buttered Leeks and Carrots
Ingredients
400g (14oz) baby carrots, trimmed
250g (9oz) baby leeks, trimmed
½tsp ground coriander
Pinch of chilli flakes
15g (½oz) softened butter
A seriously tasty way to treat leeks and carrots

Method
1 Steam veg together until cooked.
2 Meanwhile, mix coriander and chilli into butter. Season with salt and pepper.
3 Dot the butter over the cooked vegetables, then toss and serve at once.
Get ahead
Make butter up to a day ahead. Allow to soften before using
