Spiced carrot and lentil soup
Ingredients
1tbsp groundnut oil
1tbspcurry paste
1 onion, finely chopped
2 large carrots, finely chopped
150g/5oz red lentils
1 litre/13/4 pint vegetable stock
1 lime, cut into wedges
fresh coriander leaves
Wholesome, satisfying and easy to make

Method
1 Heat oil in a large pan, add curry paste and fry for 1 min, then stir in onion and cook for 3 mins, to soften. Add carrots and cook for 3 more mins, stirring from time to time.
2 Stir in lentils and stock. Simmer for 15 mins, till lentils are tender.
3 Blend till smooth. Serve with a wedge of lime (squeeze in juice to taste)
and some fresh coriander.
TIP: If you like your food fiery, add another 1tbsp curry paste.
