Spiced cherries
Ingredients
500g/1lb 2oz fresh cherries
500ml/1 pint rosé wine
100g/3½oz caster sugar
1 cinnamon stick
¼tsp freshly grated nutmeg
4 cloves
2tbsp cherry brandy or Kirsch

Invest in a cherry stoner – it’ll make this delicious recipe much easier to make

Method
1 Remove the stones from the cherries and set aside in a heatproof serving bowl. In a saucepan, pour in wine and add sugar and spices. Stir over a low heat till sugar has dissolved, then raise the heat and bubble till the liquid has reduced by half. Stir in cherry brandy or Kirsch.2 Strain over the cherries and leave to cool. Chill till ready to serve. Serve with some shortbread and a dollop of mascarpone or Greek yogurt. The flavours will develop with time.
