Spiced cherries

Ingredients

500g/1lb 2oz fresh cherries
500ml/1 pint rosé wine
100g/3½oz caster sugar
1 cinnamon stick
¼tsp freshly grated nutmeg
4 cloves
2tbsp cherry brandy or Kirsch

Method

1 Remove the stones from the cherries and set aside in a heatproof serving bowl. In a saucepan, pour in wine and add sugar and spices. Stir over a low heat till sugar has dissolved, then raise the heat and bubble till the liquid has reduced by half. Stir in cherry brandy or Kirsch.

2 Strain over the cherries and leave to cool. Chill till ready to serve. Serve with some shortbread and a dollop of mascarpone or Greek yogurt. The flavours will develop with time.
