Spiced fish
Ingredients
1 whole fish, trimmed and cleaned or filleted (we used a sea bass)
For the marinade
small bunch coriander, stalks chopped off
2 cloves garlic, peeled
1tsp ground cumin
1tsp sweet paprika
¼tsp chilli flakes, or a few more if you like it hotter
6tbsp olive oil
juice of ½ lemon

A mildly spiced marinade that can be easily doubled if you’re cooking more fish

Method
1. Whizz marinade ingredients together in a food processor till combined. If using a whole fish, slash the flesh on each side a couple of times then put the fish in a shallow bowl, add the marinade and coat well. Cover and leave overnight in the fridge.2. Preheat oven to gas mark 6/200ºC (190ºC in a fan oven). Put the fish on an oiled baking tray and cook for about 15 mins, till just cooked through (fillets will take slightly less time to cook). Serve with French bread, couscous or rice, lemon wedges and a green salad.
COOK'S TIP
You can also cook a whole fish under a hot grill or on the barbecue.
