Spicy fried chicken
Ingredients
2tbsp malt vinegar
2 cloves of garlic, crushed
2tbsp chicken seasoning
2tbsp ground coriander
2tbsp paprika
1tsp dried mixed herbs
75g/3oz plain flour vegetable oil, for frying

Method
1 Put drumsticks in a shallow dish and pierce each several times with a sharp knife. Pour over vinegar and coat drumsticks well.
2 Sprinkle with garlic, 1tbsp each of chicken seasoning, coriander and paprika and all mixed herbs. Stir to coat drumsticks. Cover and chill for several hours, preferably overnight.
3 Half-fill a pan or deep fat fryer with oil and heat to 170°C. Preheat oven to gas mark 4/180°C (160°C in a fan oven). Put rest of chicken seasoning, coriander and paprika in a clean shallow dish with flour. Season with freshly ground black pepper. Roll drumsticks in flour to coat. 4 Fry drumsticks 3 at a time for 10 mins, till golden brown, then put all in a roasting tin and bake for 15 mins in oven.
