Sprouted bean salad
Ingredients
1 x 230g pack aduki bean sprouts
200g (7oz) mixed red and yellow cherry tomatoes, halved
6 spring onions, thinly sliced
1 medium cucumber, finely chopped
4tbsp finely chopped fresh coriander
For the dressing
Juice of 2 lemons
1tsp caster sugar
1tsp wholegrain mustard
A crunchy side salad

Method
1 Place the sprouted mixed beans in a large colander and rinse under cold running water. Drain thoroughly and place in a large salad bowl with the tomatoes, spring onions, cucumber and chopped coriander.2 Mix together the dressing ingredients, season well and pour over the salad. Toss to mix well and serve.
