Stem ginger florentines
Ingredients
110g butter
85g sugar
2tbsp double cream
110g shredded almonds
110g chopped crystallised ginger
dark chocolate, melted
Perfect for making with or for children, these treats are a divine pairing of ginger and chocolate

Method
1 Melt the butter, sugar and double cream and bring to the boil. Stir in the almonds and crystallised ginger.
2 Drop teaspoonfuls onto non-stick trays. Bake at 180°C (350°F) gas mark 4 for 10 minutes or so, or until golden. When cool, brush flat sides with melted dark chocolate.
