How to sterilise jars for all kinds of preserves

Upturned jars

First...
Prepare the jars in advance so they’re ready and waiting to fill.  Thoroughly wash new and used jars (soak them in hot water first if necessary to remove old labels).

Choose your method...
Oven
Preheat the oven to 140ºC (120ºC fan) mark 1 and put the upturned jars on a baking sheet in the oven for 10-15min or until completely dry.

Microwave
Quarter fill four jars with water and arrange in a circle in the microwave. Bring to the boil on HIGH.  Remove with oven gloves, pour out the water and invert onto a clean teatowel of kitchen paper.

Dishwasher
Run the upturned jars through a hot dishwasher cycle.
