Strawberry and vanilla fool
Ingredients
500g punnet ripe strawberries (reserve some to top, if you wish)
4tbsp icing sugar
1 vanilla pod, split
142ml pot double cream
½ x 500g pot vanilla custard
These are super-easy to make

Method
1 In a food processor, add strawberries and 2tbsp icing sugar and blend till fruit is broken up. Add seeds from vanilla pod, cover and chill for a few mins, then press through a sieve to make a smooth purée.
2 In a bowl, add cream and remaining icing sugar, then lightly whip till it forms soft peaks. Put in fridge to chill for 10 mins or till ready to serve. Fill serving glasses with alternate layers of custard, strawberry purée and cream. Swirl together, using the back of a teaspoon, for a marbled effect. Top with reserved strawberries, if you wish.
