Sultana and cinnamon cookies
Ingredients
40g (1½oz) butter
40g (1½oz) golden caster sugar
2tbsp golden syrup
90g (3½oz) self-raising flour
good pinch cinnamon
75g (3oz) sultanas
You will need: a baking sheet lined with baking parchment

Method
1. Preheat oven to gas mark 4/180˚C (170˚C in a fan oven). In a large bowl, beat together butter, sugar and golden syrup, then add flour and cinnamon and stir through sultanas. Put bowl in fridge so mixture can rest for 20 mins.
2. Spoon into balls and put on baking sheet. Flatten slightly and leave space for them to spread. Bake in batches for 10-15 mins, till golden. Leave to cool for a few mins before transferring to a wire rack.
