Sunshine salad

Ingredients

1 x heart romaine lettuce, broken into pieces

1⁄2 cucumber, chopped

2 beef tomatoes, sliced

200g/7oz radishes, cut into wedges

1 avocado, quartered

1 large spring onion, chopped (optional)

3tbsp French dressing


Choose ‘ripe and ready' avocados to guarantee tasty tenderness

Method

1 Put lettuce in a large bowl then add cucumber, tomatoes and radishes. Peel avocado and slice flesh, then add to bowl with spring onion, if using.

2 Season with salt and freshly ground black pepper and drizzle over French dressing. Serve within an hour.
