Superb chicken caesar salad

Ingredients

2 slices thick sourdough or wholemeal bread
2 heads Romaine lettuce
4 ready cooked chicken breasts, without skin
For the dressing
2 egg yolks
1tsp Dijon mustard
½ garlic clove, chopped
Juice of ½ lemon
2 fresh marinated anchovy fillets
1tbsp pinenuts
25g (1oz) Parmesan, grated, plus extra shavings to garnish
50ml (2fl oz) white wine, such as chardonnay
75ml (3fl oz) mild olive oil

Method

1 Toast the bread until golden and crusty. Leave to cool. Cut into chunks and set aside. Rip the lettuce into bite-sized pieces and roughly chop the chicken.
2 To make the dressing: put the ingredients in a blender and whiz for a minute until thick and creamy. Season to taste.
3 Put the lettuce in a bowl with the chic-ken, and croutons. Garnish with Parmesan shavings and toss everything together.
