Sweet potato chips
Ingredients
1kg (2lb 4oz) sweet potatoes
2tbsp each olive oil and freshly chopped flat-leafed parsley

Method
1. Cut the potatoes lengthways into fat chips and put into a large bowl. Add the oil and 1tbsp parsley. Toss to coat evenly.
2. Cook the sweet potato chips around the edges of the barbecue grill for 20–25min, turning occasionally, until tender and golden. Add remaining parsley and toss.
