Tabbouleh with orange, red onion and mint

Ingredients

250g (9oz) bulghar wheat

65g (21/2oz) fresh mint, chopped

2 oranges, peeled and cut into segments

1 red onion, finely chopped

Juice of 1 orange

4tbsp olive oil

Method

1 Place the bulghar wheat in a bowl. Pour over enough boiling water to cover the grains, cover the bowl with clingfilm and leave to steam for 15 minutes. Drain and return to another bowl.

2 Add the chopped mint, oranges, red onion, orange juice, olive oil and season well. Toss and serve.
