Thai Chicken Skewers

Ingredients

2tbsp red curry paste, such as Thai Taste
2tbsp coconut cream
Handful freshly chopped coriander
4 medium skinless chicken breasts, each cut into three or four strips

Method

1. Preheat the grill. Soak eight wooden skewers in water for 10min or use metal skewers. In a bowl mix together the curry paste, coconut cream and coriander, add the chicken strips and stir well to coat.

2. Divide chicken among skewers and grill for 10–12min, turning halfway, until cooked. Serve with a 150g pot of yogurt with 1tbsp sweet chilli sauce stirred into it, and a tomato, cucumber and red onion salad.
