Thai crab crisps
Ingredients
200g (7oz) white crab meat
2-3tsp sweet chilli sauce
Rind ½ lime
1tbsp lime juice
Handful chopped coriander
7cm (3in) piece cucumber, diced
¼ red onion, finely diced
2 x 70g bags Sensations Lime and Coriander chutney poppadoms

¼ red onion, finely diced
2 x 70g bags Sensations Lime and Coriander chutney poppadoms
Spoon this mixture into the poppadoms just before serving them or they will go soggy.

Method
1. Place crab meat in a bowl with the chilli sauce, lime rind, juice and chopped coriander. Stir the cucumber and red onion into the crab mixture. Chill in fridge until ready to serve.
Get ahead
Make the crab mixture in the morning, cover and refrigerate until ready to serve.
