Tomato & Oregano Salad
Ingredients
700g (11/2lb) beefsteak tomatoes
1 bunch spring onions
6 oregano sprigs
sald and ground black pepper
a pinch caster sugar
3tbsp olive oil to drizzle
A light salad which makes the most of the perfect pairing of tomato and oregano

Method
1 Slice the tomatoes and spring onions.
2 Arrange a layer of tomatoes on a plate, then scatter a few spring onions, some oregano, seasoning, sugar and oil on top. Layer the remaining ingredients; cover and chill for 1-2hrs.
PREPARE AHEAD
Complete the recipe up to one day ahead, then cover and chill.
TO SERVE
Remove from the fridge 1hr before serving.
