Tropical fruit medley

Ingredients

1⁄4 watermelon, peeled, seeds removed and cubed

1 ripe mango, peeled, stone removed and sliced

2 oranges, peel and pith removed, and cut into segments

320g pack frozen pineapple cubes, defrosted

2 passionfruit, halved

3tbsp dark rum


A generous splash of rum mingles beautifully with the fruit juices for a super-boozy syrup

Method

1 Put watermelon, mango, oranges and pineapple in a large bowl. Scoop out passionfruit seeds and add to bowl with juice.

2 Pour over rum, gently stir into fruit, then cover and chill. Serve within an hour.
