Tropical fruit trifles
Ingredients
1 large passion fruit
2tbsp icing sugar (or to taste)
Juice of 1 orange
1 medium mango
4 kiwi fruit
12 seedless red and green grapes
4 thick slices sponge cake
400ml (14fl oz) ready-made custard
For the topping
100ml (3½fl oz) double cream, softly whipped
A classic dessert with an exotic twist - and all on the table in just 10 minutes!

Method
1 Scrape the seeds from the passion fruit into a large mixing bowl. Mix together with the icing sugar and orange juice.
2 Peel and dice the mango into 1cm (½in) pieces; peel and finely dice the kiwi, then add to the passion fruit mixture with the grapes. Chill until just before you are ready to serve.
3 To assemble the trifles, place the cake and fruit salad in dessert bowls or glasses. Pour over the custard, top with a dollop of cream and serve at once.
