Tuscan cauliflower

Ingredients

1 cauliflower, broken into florets
1 red pepper, deseeded and cut into strips
3tbsp olive oil
3tbsp soy sauce
2tbsp capers
2tbsp black olives


A colourful a fabulous main or side dish

Method

Preheat the oven to 200ºC (400ºF) gas mark 6. Place the florets and pepper in a baking dish and pour over the oil and soy sauce. Bake in the oven for 20 minutes, turning them over once, add the capers and olives and bake for another 3 minutes. Serve hot or warm.
