Warm spinach and lentil salad
Ingredients
225g (8oz) Puy green lentils
4tbsp extra virgin olive oil
1 red onion, sliced
225g (8oz) baby spinach
2tbsp balsamic vinegar
1tbsp fresh lemon juice
1tsp English mustard

Method
1 Cook the lentils according to packet instructions or until just tender. Drain, return to the pan and cover to keep warm.
2 Meanwhile, heat 1tbsp of the oil in a pan and fry the onion for 4-5 minutes until softened. Remove from the heat and stir in the spinach. Whisk together the remaining ingredients and season. Stir the spinach mixture into the lentils and pour the dressing over. Toss and serve.
