Warming Vegetable Soup

Ingredients

2tbsp olive oil

1 onion, thinly sliced

1 carrot, finely diced

2cm (¾in) fresh ginger, peeled and grated

1 clove garlic, peeled and crushed

¼ red chilli, deseeded and finely chopped

100g (3½oz) potatoes, thinly sliced

1 litre (1¾ pint) hot vegetable stock

2tbsp tomato purée

2 tomatoes

100g (3½oz) lettuce, shredded

2tbsp crème fraîche

Small handful flat-leaf parsley, roughly chopped

Method

1 Heat the oil in a large pan and add the onion and carrot. Cover and cook on a gentle heat for 10min.

2 Stir in the ginger, garlic and chilli and cook for 1min. Add the potatoes, stock and purée and stir well. Bring to the boil, cover and simmer for 10min or until the potatoes are tender.

3 Meanwhile, put the tomatoes in a small bowl, pour over boiling water and leave for 30sec. Carefully lift out the tomatoes, then peel and roughly chop them, discarding the seeds.

4 Add the lettuce, reserving a little for garnish, and tomatoes to the soup, season and stir in the crème fraîche. Top with parsley and reserved lettuce
