Whole fish with herbs and lemon
Ingredients
4 whole red mullet or round fish of your choice, cleaned (ask your fishmonger to prepare it for you)
2 lemons, chopped, and wedges for serving
large handful fresh thyme stalks
olive oil
A simple recipe that lets the fresh ingredients speak for themselves - especially if the fish is freshly caught.

Method
1 Rinse the fish inside and out, and pat dry. Make diagonal cuts on both sides, then stuff the body with lemon and thyme.
2 Brush with oil, then put the fish into a fish rack or straight onto the barbecue. Cook for about 5-8 minutes, turning halfway through. The flesh should be firm and will just give slightly when ready. Serve with lemon wedges.
