Wilted Spinach with Lemon
Ingredients
150g (5oz) baby leaf spinach
zest of ½ lemon
2tsp extra virgin olive oi
salt and freshly ground black pepper
A simple yet perfect dinner party vegetable side dish

Method
Wash the leaf spinach, then tip into a pan and cover with a lid. Cook over a low heat for 3-4min until wilted, drain thoroughly, then add the zest and olive oil. Season and toss to coat evenly. Serve immediately.
